S'more Scones

Gooey, chocolatey s'mores and scones are basically a match made in Heaven. 
You will need:

1 1/4 C plain flour
20g cold butter
1 1/4 C graham/cream crackers
2 tbsp sugar 
1 tbsp baking powder
1/2 tsp salt
1 C marshmallows (or more if you want) 
3/4 C chocolate chunks (bigger pieces of chocolate means more gooeyness!)
1 1/2 C cream 

  1. Preheat oven to 220° C or 425° F.
  2. Put the butter and flour in a food processor and whiz until it resembles breadcrumbs. 
  3. Break the crackers into pieces and process until pulverized and combined with the flour.
  4. Transfer mixture into a large bowl and stir in the baking powder, sugar and salt.
  5. Cut the marshmallows if necessary (mine were quite big so I cut them in half) and add the marshmallows and chocolate to the mixture. 
  6. Pour in cream and mix until loosely combined.
  7. Place tablespoons of mixture onto a parchment lined baking tray and place in oven for about 15 minutes. They will be ready when the marshmallows are melted and the top is golden. 
Serve these up fresh out of the oven while the marshmallows and chocolate are still melted...
