S'more Scones

Gooey, chocolatey s'mores and scones are basically a match made in Heaven.
1 1/4 C plain flour
20g cold butter
1 1/4 C graham/cream crackers
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 C marshmallows (or more if you want)
3/4 C chocolate chunks (bigger pieces of chocolate means more gooeyness!)
1 1/2 C cream
- Preheat oven to 220° C or 425° F.
- Put the butter and flour in a food processor and whiz until it resembles breadcrumbs.
- Break the crackers into pieces and process until pulverized and combined with the flour.
- Transfer mixture into a large bowl and stir in the baking powder, sugar and salt.
- Cut the marshmallows if necessary (mine were quite big so I cut them in half) and add the marshmallows and chocolate to the mixture.
- Pour in cream and mix until loosely combined.
- Place tablespoons of mixture onto a parchment lined baking tray and place in oven for about 15 minutes. They will be ready when the marshmallows are melted and the top is golden.
