Cauliflower Crust Pizza

Healthy pizza? What a dream come true! 
The cauliflower crust doesn't taste the least like steamed vegetables and it is a great way to get a boost of numerous vitamins (including B's, C and K) and omega 3 and protein. The crust even browns up nicely the way a tradition wheat one would!







Ingredients

Half a large cauliflower head (about 600 grams)
1 egg
4 tablespoons flour (you could use plain flour, or make it gluten free with almond flour, coconut flour etc.)

Any toppings you like! We used mushrooms, chicken, pineapple, Edam cheese, onion, tomatoes, tomato paste, baby spinach and parsley.

Method (oven needs to be preheated at 220° C or around 430° F) 



  1. Cut the florets up and chop in a food processor until fine (it kind of resembles rice). If your food processor is small like ours, we recommend processing batches of cauliflower rather than all at once, to ensure there are no rebellious florets which seem to always miss the blade.

2. Steam in the microwave for about 3 minutes on high. Alternatively you can steam it over the stove. Allow to cool for at least 15 minutes.

3. Then you're going to squeeze out the moisture from the cauliflower with a cheese cloth or clean tea towel. Make sure you make it as dry as possible! There is a heck of a lot of cauliflower juices (?) unfortunately :( 

4. Now stir in the egg and ground almond/flour/ground oats until well combined.

5. Shape this on your pizza stone or baking tray, although I recommend lining with baking paper as the mixture is quite sticky. We made the sides slightly thicker to resemble a "real" pizza.




6. Bake this in the oven until golden (15-20 minutes) and not as soft/mushy.
While this is baking, you could chop up your toppings :)



7. Once the base is ready, place your toppings on the base and bake for another 10-15 minutes until the cheese has melted and becomes golden. 



This pizza is a great healthy dinner or lunch idea and the base can be prepped before hand, then simply add the toppings, bake and voila! We like this base because you can really taste the different flavours of the toppings and the cauliflower isn't noticeable (in fact, my dad didn't even know the base was any different).
