Basic Granola Recipe

My highly customisable granola recipe where you can basically add any mix ins and toppings, almost like at self serve froyo shops!
Spring has finally arrived in New Zealand whereas almost everyone else in the world is embracing autumn and pumpkin spice everything. This granola however is perfect for whatever season it may be, as it is easily customisable. I put a sprinkle of orange zest in mine but you can add anything, from chocolate chips to black sesame seeds.
When it comes to granola, I prefer to add dried fruit, nuts and seeds before serving because it means I can have a different flavour combination every morning! I always keep mix ins on hand and my favourites include currants, almonds, chia seeds and pumpkin seeds. Also, I find dried fruit and seeds tend to burn before the oats become golden, so it is easier to simply toss them in at the end.
What you will need
1 C coconut (shredded)
1 TBSP cinnamon (or your favourite spice ie. pumpkin spice, cardamom)
1 Pinch salt
1 1/2 TSP vanilla extract
1/4 C honey
1/4 Vegetable oil
Instructions
- Combine dry ingredients in a large bowl
- Mix in wet ingredients
- Spread on a baking paper lined tray
- Bake at 160 degrees celsius until golden (approx. 15-20 min)
Serve with milk or yogurt or grab a handful for a healthy snack!
