Healthy Cookies

A week of little sleep and last minute study sums up school exams quite accurately. I sat at my desk at three o'clock in each morning kicking myself for leaving revision to the night before of each exam and promised that for the end of year exams I would definitely study weeks in advance (let's hope I learn my lesson in my thirteenth year of school).
Anyhow, as soon as I got out of that chemistry exam I began to plan what to do with all the free time on my hands... before I got my marks back that is. And so, the decision was made that I would bake some cookies! I've been wanting to try out some wheat flour alternatives so this was the perfect opportunity to go to the supermarket and pick up a bag of ground almonds.
This recipe is adapted from Niomi Smart's "Healthy Chocolate and Almond Spiced Cookies" (x) and they are absolutely delicious!
What you will need:
2 C Ground Almonds
1/2 C Oats
1 TSP Cinnamon
1/2 TSP Ground Ginger, Nutmeg and Pink Himalayan Salt
1/2 TSP Baking Powder
4 Squares Dark Chocolate
2 TBSP (heaped) Coconut Oil
1.5 TBSP pure maple syrup
1/2 Ripe Banana
1 TBSP Peanut Butter
Instructions:
- Preheat your oven to 180 degrees celsius and line two baking trays.
- Chop your chocolate into chunks and mash the banana with the back of a fork.
- Melt the coconut oil either over the stove or in the microwave, then mix in the maple syrup.
- In a mixing bowl, combine the ground almonds, oats, spices, salt, baking powder and chocolate.
- Add the banana, peanut butter and mixture of oil and syrup.
- Mix until a ball forms, as the ingredients should all be stuck together.
- Place tablespoon amounts on the trays and flatten with the back of a fork.
- Bake for 15 minutes or until golden brown (they will still be quite soft to touch).
- Allow to cool completely on a rack and store in an airtight container.
I made 16 cookies with this recipe and it took about 30 minutes (prep + bake).
You can add whatever you want to this recipe. I added oats to give the cookies some more texture, and I think dried cranberries would work really well too!
