Vanilla Iced Coffee (ft. Lewis Road Creamery)

Spring always seems to be a sporadic time where the weather will be sunny and beautiful one minute and rainy the next. Nevertheless, I took advantage of the warmer weather and made a super simple iced coffee, using the vanilla milk from Lewis Road Creamery's new range.
This lovely local brand specialises in dairy products (more specifically milk, butter and cream) and is based in the Bay of Plenty. Following their chocolate milk successes, the creamery has come out with two new flavoured milks- vanilla and coffee. My mother got her hands on both which was lucky! The coffee one (made with Supreme coffee beans) is delicious and I got a nice caffeine kick when I snuck the bottle into my room during a 4am study session.
I used the vanilla milk in this coffee to add some flavour. The vanilla taste comes from organically grown Heilala vanilla beans and while I find the vanilla to be quite overpowering in the milk by itself, it was perfect in the iced coffee.
All you need is cooled coffee (I brewed mine using my DeLonghi machine and this is a long shot of extra strong espresso), milk and ice.
Put the coffee and ice in a tall glass, then slowly pour your milk in for the perfect coffee meets milk effect.
You can make your own vanilla milk by combining a dash of vanilla extract with milk. The amount of milk is really dependent on how you prefer your coffee!
