Colourful Winter Vege Bowl
Tuesday, July 05, 2016Semester one is complete for my first year of university and everyone in my hall was bubbling with anticipation about going home for the break. I for one was excited to come back to food - whether it be home cooked or trendy cafe dishes. After a huge grocery shop with mum, I got back in the kitchen and the cooking (plus ensuing mess) began.
This simple bowl is great for all year round, but I find I like these the most in winter due to a lack of summery seasonal vegetables like cucumber and capsicum.
Ingredients (for one bowl)
2 stalks kale, chopped up
2 cloves garlic, thinly sliced
1/2 a large kumara (sweet potato), steamed
1 C sliced purple cabbage
1/2 C chickpeas
2 tsp ground cumin (or to taste)
1 wedge of lemon or dressing of your choice
Salt and pepper
1. Heat oil (I used rice bran) in a pan and add garlic, cooking until light brown.
2. Add kale and wilt for a few minutes - this helps break down the cellulose (fibre) in kale a little, which increases the bioavailability of the nutrients because it is more easily digested.
3. Toss the chickpeas in the cumin
4. Combine all the ingredients and add s + p to taste, and add dressing/lemon juice just before serving
Of course you can substitute basically any vegetables and proteins for your healthy bowl!
